Lazy Day Lasagne



I got this book as a Christmas present from my Mamaw in 2007. She told me this cook book is now out of print and that I got the last copy available for sale. It was published by the Central Delta Academy Parent-Teacher Organization and has over 300 recipes and features the art of folk artist Ethel Wright Mohamed. It is a real shame that the book is no longer in print, not just because of the recipes but because the the art and stories that went with the art.

Yesterday, Daniel and I celebrated our ten month anniversary. Yeah a little silly but fun. I made the Lazy Day Lasagne from the Share-cropper Cookbook.

1 (12-ounce) container of cottage cheese
2 cups of mozzarella cheese, shredded
2 eggs
1/3 cup fresh parsley, chopped
1 teaspoon onion powder (used some fresh chopped onion instead)
1/8 teaspoon of pepper
1/2 teaspoon of dried basil leaves (you can use fresh)
1 (32 ounce) jar spaghetti sauce
3/4 pounds ground beef, cooked and drained
9 lasagna noodles, uncooked
1/4 cup of water
Parmesan cheese

Preheat oven to 375 degrees F.
In a large bowl mix first 7 ingredients and set aside. In a medium bowl mix together spaghetti sauce and cooked ground beef. In a 12x8x2-inch baking dish spread three uncooked noodles on the bottom, then spread meat sauce, and then cottage cheese mixture. Continue to stack and layer these ingredients until you run out. Pour water around the edges and sprinkle Parmesan cheese on the top. Bake covered for 45 minutes, then uncover and bake again for 15 minutes.
