1 cup of steamed broccoli
1 large red medium potato, peeled, and boiled
1 tablespoon non hydrogenated margarine (like smart balance)
1 tablespoon of mayonnaise
salt, pepper, and onion powder to taste
chicken broth or stock or vegetable stock
Blend together the first four ingredients in and electric blender or food processor. Add chicken broth or stock until you get it to a soupy enough consistency for yourself. Add salt and pepper and a dash of onion powder to your own personal taste. Reheat if necessary. Serve hot. Makes a good hot lunch for a cold winters day. Makes 1-2 servings.
This looks good! I have been cooking potato soups lately, and I want to try this one!! And, I like the new look!
